Victoria Dockside, on the Kowloon waterfront

The hotel is the centrepiece of Victoria Dockside, the K11 development on the Tsim Sha Tsui waterfront that also holds the K11 Musea museum-retail complex and the Avenue of Stars promenade. The Star Ferry pier is a few minutes’ walk, and the crossing to Central takes ten minutes. Tsim Sha Tsui MTR is beneath the site, so Hong Kong Island, the Peak and the markets of Mong Kok are all within reach without a car. Hong Kong International Airport is around 35 minutes by road.

The tower is by Kohn Pedersen Fox and the interiors by Tony Chi, who set it up as a grand residence rather than a hotel: high ceilings, dark timber, brass and marble, and an art collection that runs from Damien Hirst’s butterflies in the tea lounge to Henry Moore in the lobby. The harbour is the point of every public room, and the view from the 40th-floor Manor Club is the reason people photograph it.

Rooms, suites and the Manor Club

The 413 rooms and suites start at 53 square metres for the entry-level rooms, which is large for Hong Kong, and every category has a marble bathroom with a separate bath, a walk-in wardrobe and floor-to-ceiling windows. The choice is which way to face: Harbour View rooms look south across Victoria Harbour to the island skyline, and Kowloon Peak View rooms look north to Lion Rock. Harbour is the one to ask for.

The 91 suites and the Club rooms come with access to the Manor Club on the 40th floor, which runs all day with breakfast, afternoon tea, evening cocktails and canapes, and a butler. For a stay of three nights or more the Club rooms are worth the difference. At the top are the Harbour Corner Suites, the Grand Harbour Corner Suite at 123 square metres and the Manor Suite with its own dining room. Asaya and the infinity pool

Asaya, Rosewood’s wellness brand, takes the sixth and seventh floors, and the 25 metre outdoor infinity pool on the sixth-floor terrace hangs over the harbour with the skyline as the far wall. It is heated, open all year and the best place in the city to spend a jet-lagged afternoon. Cabanas line the deck, and the pool bar serves lunch.

The spa itself is run with Guerlain, with treatment rooms, a hammam and sauna, a fitness centre with harbour views and the Asaya Kitchen for lighter food. Treatments book up, so we reserve them before you travel.

Eleven restaurants and bars

This is one of the great hotel dining line-ups anywhere. The Legacy House is the Cantonese restaurant, overlooking the harbour with seven private rooms, and CHAAT is refined Indian cooking built on street food; both are Michelin recognised. HENRY is the grill and steakhouse, Bayfare Social is Spanish with a harbour terrace, Marmo Bistro is French, and BluHouse is Italian. Holt’s Cafe is the hotel’s take on a cha chaan teng, Hong Kong’s local diner, and the place for breakfast when you are not in the Manor Club.

The Butterfly Room, under Damien Hirst’s butterflies, does afternoon tea, and the Butterfly Patisserie sells the cakes to take away. DarkSide is the bar, with live jazz, rare aged spirits and cigars, and XX is the quieter cocktail lounge.
